Sustainability Initiatives

Your Sodexo Campus Dining Team is dedicated to sustainability.  We know we can all work together to make a positive impact right here at Desales University. In addition to the many initiatives we take on as a company, we have implemented the following programs specific to Desales University.

Waste Reduction Efforts

Composting (seeking new vendor)

Food waste in landfills creates methane, a greenhouse gas which is 21x more potent than CO2.  (www.epa.gov)  Our first priority is to reduce food waste.  We compost food waste that is unavoidable which reduces greenhouse gas emissions and can also be used to amend soil thereby increasing drought tolerance, improving soil structure and health and reducing need for water and fertilizers.


Local Results: We started composting in January 2012. During the past year, we composted 9,000 pounds of food waste from our kitchen and our food court.


We have plans to remove the garbage disposal in order to cut down on our water and electricity usage.

Xpressnap Dispensers

Xpressnap Dispensers save energy and waste.  The napkins are made of 100% recycled paper and the dispenser will encourage customers to take (and waste) fewer napkins. Energy is saved because less power is used to recycle paper products than to create them from virgin material.  

Printing on Both Sides of the Paper

To save paper, we use paper with recycled content and we print on both sides whenever possible.

Green Chemicals

Ensuring more than 90 percent of the cleaning chemicals used in the University Center are "Green Seal" certified, concentrated or sustainable.

Recycling

Cans, bottles, cardboard, aluminum, plastics and other recyclables are always recycled at our locations.

LED Digital Signage

A sustainable switch in our marketing is using LED digital signs to notify our guests of our promotions and products at point of sale.

Utensils and Serving Ware

To promote a green atmosphere we have reusable utensils, cups, plates, unwrapped straws, and wooden stirs available at all times in order to decrease waste. 

Energy Reduction Efforts

No Idling at Loading Docks

Working with our vendors, our catering staff and our campus facility services staff to make sure all vehicles are turned off while they are parked in our loading dock.

Energy Star Equipment

Since 2012, we have been transitioning to Energy Star rated equipment. As of now we have an Energy Star rated fryer, reach in cooler, and we plan to replace all of our equipment to this standard.

Local / Seasonal / Responsible Sourcing

Farmer’s Markets

Farmer's Markets bring the idea of local home for many of us.  That is why we work closely with our local suppliers to feature locally grown products at campus Farmer's Markets. 

Last year we held 2 farmer’s markets featuring many local farmers, growers and suppliers.

Local Suppliers 

We work closely with local produce distributors to maximize the fruits and vegetables purchased from local farms. We also purchase from local dairies, and participate in farm to school initiatives.  Tracking local purchases helps us to meet our Better Tomorrow Plan commitment of 20% local purchase by 2020. 

We are proud to feature the following local suppliers: Common Market, Balford, B &M, and Pocono.

Sustainable Fish and Seafood

We are committed to serving sustainable seafood and fish.  By 2015 100% of our fish and seafood will be sustainably certified by the Marine Stewardship Council or the Best Aquaculture Practices.  We do not purchase any at risk species.

Local Dairy

All of our fluid milk is purchased from local dairies that do not use rBST.
